Loved this! I learned to make umeshu when I first moved to Japan. I have yet to try umeboshi - enjoyed the read, hope you post an update ☺️

I was just in Paris and got to peek inside Ogata tea and showroom. It's beautiful. Though I didn't have tea, I've had tea at Sakurai in Tokyo a number of times- same company, it may be worth a visit while you are there. https://sakurai-tea.jp/ Happy travels to you!
